Heterogeneity during autoxidation of linoleic acid encapsulated with a polysaccharide Original Research Article

The autoxidation process of linoleic acid encapsulated with a wall material was simulated using two models: a diffusion model of oxygen was simultaneously considered with autocatalytic-type autoxidation kinetics, and the other model was the distribution of the free energy of activation for the rate constant of the autoxidation kinetics. The latter model could better express the experimentally observed transient changes in the fraction of unoxidized substrate within the microcapsule than the former model. This implied that linoleic acid interacted with the wall material at various strengths.
