  • Abstract
    The volatile flavour components of different portions namely head, whole and muscle of shrimp (Solenocera indica) were collected by a combination of distillation extraction techniques and separated by gas chromatography and identified by mass spectrometry. A total number of 44 volatile compounds in many different chemical classes were identified.
