Abstract :
Acylglycerol emulsifiers were synthesized in situ by esterification of glycerol with fatty acids in the presence of sodium carboxylates. The modification of hydrophilic properties of emulsifiers was obtained by controlling sodium salt content in the reaction mixture. Model emulsions containing synthesized preparates were characterized by rheological measurements. The influence of phase volume ratio and temperature on emulsion inversion and stability was studied. The interaction of monoacylglycerols and sodium carboxylates influenced HLB values of the emulsifier and the oil phase volume in O/W emulsion. The relationship between viscosity of the emulsion and hydrophilic properties of the synthesized emulsifier was observed.
