Abstract :
An efficient approach for synthesis of the food odorant 2E,4E,6E-dodecatrienal (DTE) by extension of 2E,4E-decadienal (DDE) is reported. DTE shows higher protein crosslinking ability than the lipid peroxidation products DDE and 4-hydroxy-2E-nonenal.
