Abstract
The mineral and sugar fractions of 25 peach liqueurs have been determined in order to characterise these beverages in relation to their base fruit: peach. Fruit components were found in only nine of the liqueurs analysed. Sucrose was the major sugar, together with the polyalcohol sorbitol. Potassium, calcium and magnesium were the major macroelements. In the other liqueurs analysed, β-fructose and α- and β-glucose were the major sugars, sorbitol was not detected, and potassium, calcium and magnesium were in small proportion. These beverages have probably been made by aromatising techniques, without direct addition of the fruit.
