Abstract
Rheological behavior of carrot oil emulsions thickened with variable concentrations of carboxymethylcellulose at dynamic and oscillatory have been investigated. Among the prepared materials, the emulsion containing 0.6 wt.% of thickener was found to be most stable as confirmed by minimal changes of dispersion index within the examined storage period and by rheological tests. Emulsions with uniform size distribution exhibited higher viscosities and better long term stability than those of higher dispersity index. Oscillatory tests proved the formation of emulsion microstructure at steady conditions illustrated by linear viscoelastic response at low deformations. The stability of carrot oil emulsions was confirmed also by oscillatory tests showing the domination of storage modulus G′ (elastic) over loss modulus G″ (viscous behavior) through the wide frequency range and weak frequency dependence of G’ modulus.
