Colloidal basis of emulsion color

The perceived quality of many commercial products that are based on emulsions is determined by their color. Recent theoretical and experimental research has focussed on determining the relationship between emulsion color and the colloidal characteristics of the system, e.g. particle size, concentration, refractive index and aggregation. Appreciable progress has been made in understanding the factors that determine emulsion color and in describing the optical properties of emulsions theoretically.
