Abstract
Usage of herbal medicine has been under so much attention for many years. They are gradually replacing synthetic drugs in pharmaceutical fields due to their fewer side effects. Nowadays, essential oils are widely used for the treatment of diseases as well as being applied as pesticide. In this study, 32 components of Zingiber essential oil were identified representing 97.42% of the extracted oil by Gas chromatography-Mass spectrometry (GC/MS). Antioxidant activity of the extracted oil was evaluated. In this experiment, the effect of Zingiber essential oil on oxidation temperature of oleic acid was investigated using a diffential scanning calorimetric (DSC) instrument.
