Abstract :
The aim of this work was to reveal the role of fermented soy been as a type of feeding and is role in enhancement of the probiotic growth. Study was conducted on 27 mice of two months age and lOOg average weight. Animals were divided into three groups, control group, animals receiving fermented soy bean as a major food and the third one on non-fermented soy bean. Animals that received fermented soy bean showed an enhancement in the oxyhemoglobin concentration that was concomitant with non elevation of the non-functional hemo¬globin derivatives. Results obtained from the absorption spectra of hemoglobin also showed some indication of in¬creasing the molecule stability that revealed by the height and width the peal at 280nm that characteristic to the abnormal motion of the hemoglobin molecule. Electrical conductivity measurements recorded a significant decrease indicating more stability of hemoglobin. An appreciable increase in hemoglobin enthalpy and entropy were detected in group III that received fermented soy bean. An opposite behavior was recorded regarding the free energy.
