Abstract
This study was conducted to clarify the presence of toxin - producing Fungi in some foods in Dhamar city, Yemen, namely: Almonds, Pistachio, Peanuts. Cashew nuts, Dates and Cake. The results of diagnostic isolates of the fungi isolated from food samples under study, showed clear differences in the numbers and types of fungi, contaminated samples, with presence of seven types of tracking five fungal species in different percentage on the Potato Dextrose Agar. The Cashew sample is the most polluted sample. Also the results showed that the most ubiquitous species in all samples are Aspergillus niger. A flavus, A versicolor, in addition to the presence of other fungal species although in Varying percentages i.e. Fusarium sp., Penicillium sp., Chrysosporium sp. and Alternaria sp. The results showed the ability of some fungal isolates to produce Aflatoxins in the samples under study, by using of ultraviolet test, developing the ability of Pistachio, Cashew nuts. almond and Cake that are present in certain areas in Dhamar city to secrete Aflatoxins, while some other foods such as date, gave negative results, of the test subject itself.
