Abstract :
It is widely considered that conventional cage system create a negative effects on birds welfare restricting theirs natural and comfort behaviours. Foodstuff quality has recently gained in prominence. It is importante to monitor and evaluate individual parameters of egg quality with respect to maintaining maximum levels of animal welfare, evan if it cause necessity of new investments and increase of production costs. It is necessary to monitor the level of bacterial contamination of eggs, which affects the shelf life and overall quality of eggs. Impact on egg quality of internal factors (genotype, general health, age, production stage) and external factors (housing system, nutrition, microclimate and stress levels) is analysed
