Abstract :
Enzymes are globular protein produced by living cells used to catalyze specific biochemical reactions. Enzymes are specific in each reaction, acting on a high conversion rate and the reaction is optimum at specific physiological conditions. Protease is an enzyme that catalyzes the breakdown of the molecular bonds in the polypeptide complex. Protease (EC 3.4.21-24), can be found in microorganisms, plants and animals. However, microorganisms are the most preferred source due to their rapid growth, minimal space requirement for culturing processes and easily manipulated genetically in order to produce beneficial enzymes. Protease production from microbial fermentation has been known worldwide because it optimizes the usage of agriculture and domestic wastes as substrate. Subsequently, it will reduce the cost involved. Proteases have many applications in various disciplines. In this modern world, demands for microbial protease keep increasing as more people aware of the green environment. Microbial proteases provide safer alternatives to the industry and can replace the usage of synthetic materials which can pollute our environment.
