Abstract :
ducing the concepts of multi-target preservation of foods, and the metabolic
exhaustion of microorganisms which causes an autosterilization of stable hurdle
technology foods. Furthermore, a linkage of hurdle technology with HACCP,
and a user guide for food design which also includes predictive microbiology have
been suggested. Foods designed by hurdle technology are now prevalent in
industrialized countries and increasingly in developing countries (Latin America,
China, India) too.
In 1994 the FLAIR Final Report of a research project on combined processes
with contributions from scientists of II European countries, and an illustrated
compendium for food processors who are interested in the application
of hurdle technology have been published. Both booklets are available on
request.
