Abstract :
with the highest concentration (0·4% v Iv) of this phenolic extract used in this
study.
The phenolic extract of carob beans was also tested in home made salads
(potato salad, aubergine salad and tuna salad) inoculated with Salmonella enteritidis
and Staphylococcus aureus and stored at 4°C under air or CO2 . The inhibitory
effect of phenolic extract varied in different foods. It was found that both
pathogens died rapidly in aubergine salad and showed a moderate inhibition in
potato salad while no effect was evident in tuna salad.
