Abstract :
ABSTRACT: There are more than 55 million tons type of apple ripen in world which Iran is the third one of the apple production countries. For sorting or for product more apple juice from apple we need to know about apple physical and chemical properties. The North-West Iranian apple varieties consisted of Atirli (At), Kapak (Ka), Kowse (Ko) and Paiez(pa, not ripen on tree) were obtained from orchard located in Maku. Apple Ko contained high lengths and surface area. Therefore, it is a good for sorting. Ka variety had high juice content. But Ko variety had high juice water content and it good for apple juice but not had more apple juice. Ka variety had more juice content with juice water content and it Advantageous for juice factories.
