Abstract :
Physical and mechanical properties of peach fruit are necessary for design of equipment to
handle, transport, process and store the crop. These properties included fruit weight, dimensions, volume,
density, thickness, sphericity, surface area, aspect ratio, geometric mean diameter, equivalent diameter,
arithmetic mean diameter, project area in vertical and horizontal position and coefficient of friction. The
analysis indicated that differences between average lengths, Thickness, Mass, Volume and Project area
(in horizontal view) of the three peach cultivars were significant in two stage of Maturation. Also the
variance analysis of data indicated that maturation stage had significant effect on the average values of
friction coefficient in case of Shalil in all surfaces except wood surface and in case of Elberta values for
wood surface were significant at 5% probability level, While the differences between the average values
of friction coefficient for Anjiri in all surfaces were none significant in two maturation stages. The
published comparison of data for these cultivars, which might be useful in design of industrial equipment
for peach fruit, was generally found to be statistically different.
