Sponge phases: An example of random surfaces

We are going to review the main properties of the sponge phases made of surfactants in solution. These phases have been discovered and studied recently. They are unique example of random surfaces. We show that their experimental behaviour can be understood in terms of competition between the elasticity of the surfactant film and the entropy. The problem of defects in the surface is briefly addressed too.
