Abstract :
An immunoassay is described to detect galactomannans in foods. The assay uses a monoclonal antibody that specifically binds the (1→4)-β-linked mannan backbone of galactomannans. Carob and guar galactomannan additives in commercial food samples can be detected at concentrations as low as 5 ng/ml without prior sample preparation other than dilution.
