ارزيابي برخي خصوصيات فيزيكي و شيميايي ميوه خرماي مضافتي در مراحل مختلف رسيدگي

The evaluation of some physical, chemical properties of Mazafati date fruit in the different stages of maturity

دانستن خواص محصولات كشاورزي فصل نويني را در طراحي بهينه دستگاه هائي كه در انتقال، جابجائي، فرآوري و ذخيره اين محصولات بكار مي رود گشوده است. در اين بين، مكانيزه كردن فعاليت هاي مرتبط با خرما در اولين گام نياز به اطلاعات جامع و كاملي از خصوصيات و شرايط محصول دارد. در اين پژوهش برخي خواص فيزيكي و شيميايي خرما رقم مضافتي در مراحل مختلف رسيدگي (كيمري، خلال، رطب و تمر ) تعيين و مقايسه شده است . تجزيه و تحليل ابعادي در مراحل مختلف رسيدگي يك افزايش در مراحل اوليه رشد را نشان داد به طوريكه در هفته 16 پس از تلقيح حداكثر مقدار ابعادي مشاهده شد. سپس با عبور از مرحله خلال تا رسيدن به مرحله تمر يك روند كاهشي طي شد. چگالي توده، چگالي حقيقي و تخلخل ميوه در مراحل اوليه رشد يك روند كاهشي را دنبال نموده و در هفته 16 پس از تلقيح به كمترين مقدار خود رسيد. سپس اين مقادير يك روند افزايش را دنبال نموده به طوريكه بيشترين مقدار خود را در مرحله تمر بدست آورد. درصد كل مواد جامد محلول و ميزان قند كاهنده ميوه واريته مذكور يك روند افرايش را با رسيدن طي كرد. با توجه به نتايج بدست آمده، زمان مناسب برداشت براي خرماي مضافتي 24 - 22 هفته پس از تلقيح مي باشد كه در اين هنگام ميانگين وزن ميوه ، 8/06 گرم و طول و عرض ميوه به ترتيب 34 ميلي متر و 18 ميلي متر است. مقدار رطوبت ميوه نيز در اين مرحله 43 درصد نتيجه شد.

Knowing the physical properties of agricultural produce made a new approach in optimum designing of transport, handling and processing systems. In the meantime, for the first stage of mechanization of related activities of date, comprehensive and complete data on physical properties of produce is needed. In this study, some physical and chemical properties of Mazafati variety of date fruit at different stages of maturity (Kimri, Khalal, Rutab and Tamt) were evaluated. Dimensional analysis at different stages of maturity showed an increase in the early stages of growth, as in the 16th week after inoculation the maximum of dimensions were found. Then, with passing from Kimri stage until Tamr stage a decreasing trend was seen. Bulk density, true density and porosity in the early stages followed a decreasing trend and reached the lowest amount in the 16th week. Then, these values follow an increasing trend as maximu value was obtained in the Tamr stage. The percentage of soluble solids content and sugar content of studied variety follow an increasing trend with increasing of maturity stage. According the obtained results, the optimum harvest time of considered variety is between 22 and 24 week after inoculation when the mean weight, length and width of fruit was 8.60 g, 34 mm and 18 mm, respectively. The moisture content of date fruit in this stage was 43%.
