The oil rose (Rosa damascena Mill.), one of the economically important species of Rosaceae family, have been
widely cultivated for production of rose oil and rose water. In the present study, four different stages of the flower
development, commonly harvested in which, were evaluated for yields and components of volatile oils extracted by
hydrodistillation and solvent extraction method. Identification of chemical compositions of volatile oils was
performed through GC and GC/MS. The results indicated that the flowers harvested at fully opened stage qualified
for maximum yields of volatile oils (0.067 w/w% and 0.11 w/w%, using hydrodistillation and solvent extraction,
respectively) and highest percentages of representing compnents of the rose oil. Phenylethyl alcohol was also found
to be the main constituent (56%) of the rose absolute in this developmental stage.
