Tartaric acid is an organic acid crystal with
two protonated nature and a strong dicarboxylic acid
that be found in plants and fruits especially grapes.
Various techniques for extraction and separation of
organic acids is provided. The present paper describes
the of reactive extraction of tartaric acid from aqueous
solutions by TOA (trioctylamine) that is a tertiary
amine mixture in different diluent solvents. The factors
affecting the extraction including type of solvent,
temperature, type of salt, concentration of salt and
concentration of TOA in membrane phase were
investigated. The aim of this study is achievement of
appropriate system for more separation of tartaric acid
in grape juice. The most appropriate solvent, salt,
temperature and concentration of TOA was identified.
