Effect of a three month consumption of soy bean on histology of duodenum

Objectives: One of the valuable but cheap herbal productswhich could be considered as a complete food with sufficient protein used in meat diets and dairy products, is soy bean. Regarding to this fact that absorption is performed in intestines and especially duodenum, nutritional substances could effect on duodenal wall and its function. The aim of this investigation is to study the effect of soy bean on duodenum.Materials Methods: In the present study duodenal samples from 20 immature female surri mice treated with diets containing soy bean and without soy bean were subjected to study. So the mice after adaptation with environment, were divided into two groups with two different diets. The control group was fed on a diet without soy bean and the treatment group was fed on a diet containing soy bean. And at the end of treatment, the mice were anesthetized. Some specimens, each one centimeter, from duodenum provided and fixed in 10% formalin. After histological processing, paraffin blocks were prepared and sectioned. The sections were stained with H E and studied under a light microscope.Results Conclusion: The results of this study showed that in the tissues of the group consuming soy meal some degrees of destruction on the top of the villi were observed, whereas it was not present in the control group. Also in the treatment group increase in the thickness of mucosal epithelium, compared with the control group was observed. Liebercohn glands, submucosa and its glands did not show any changes. Destruction and also cellular disarrangement in the epithelium of the villi indicate that cellular resistance could be decreased due to soy meal consumption. So due to importance of duodenum in absorption and thus its destruction, chronic consumption of soy bean should be avoided.
