The aqueous enzymatic process of preparing oil from Pistacia khinjuk was investigated. Pistacia khinjuk oil was extracted by aqueous enzymatic oil extraction under optimized aqueous extraction conditions using protease. The optimal processing conditions used were using of the enzyme in 10 g of Pistacia khinjuk seeds were as follow: hydrolysis temperature 50°C, pH 8.0, extraction time 18 h, and with constant shaking at 80 rpm. Centrifuging the mixture at 10,000g.for 20 min separated the oil with a recovery of 47–52%.
