Lycopene is a natural carotenoid pigment and a high value nutraceutical having wide use. The objective of the present work was to obtain a good yield of lycopene from tomato tissues, using the ultrasonic assisted extraction, enzymatic process with cellulase alone and combination of those processes. The influence of ultrasound on lycopene extraction from tomato has been studied. Enzymatic extraction with cellulase aided extraction of lycopene from tomatoes. Combination of ultrasonic and enzymatic processes led to increasing of lycopene from tomato.
