The purpose of drying agricultural wastes is to reduce moisture, increase the shelf-life and maintain the material properties. In this study, convective drying with airflow was used to dry apple pomace to reach final moisture content of 12% w.b. The effect of temperature and air flow velocity on the drying time has been studied. The design expert software which significantly reduces the number of experiments was used to design and predict the process. The results showed that the drying time decreases by increasing the temperature and air velocity. The optimal operating conditions showed to be at an air temperature of 60.99 0C and an air velocity of 1.35 m/s. It was concluded that the the air temperature was the most effective factor on the drying time of apple pomace. In general, the drying time decreases with increasing temperature. The effect of increasing the temperature is increased at high air velocity.
