2, 6-dimethoxy-benzoquinone (2, 6 DMBQ) is found to be highly glycosylated and inactive form in wheat germ that converted to an active form of the anti-cancer agent 2.6 DMBQ by fermentation of wheat germ. Diferent parameters such as the particle size of wheat germ, agitation speed, dry to water ratio, and weight ratio of yeast to wheat germ, pH, aeration conditions influence on 2.6 DMBQ content of fermented wheat germ. In this research, production of 2.6 DMBQ was enhanced by investigation effects four factors particle size of wheat germ, agitation speed, dry to water ratio, and weight ratio of yeast to wheat germ in three level by Taguchi method in wheat germ fermentation.
The maximum production of 2,6 dimethoxy benzoquinone was 2.58 mg/g (dry material) obtained in optimal conditions as 60-mesh sieve, agitation speed at 150 rpm, dry to water ratio at 1/11 and weight ratio of yeast to wheat germ at 1/2. The agreement between the predicted and observed values confirms the precision of the applied method to predict the optimum conditions. According to the available data, amount of produced 2.6 DMBQ in this study is the highest that has been reported in wheat germ fermentation. Also it concluded that the taguchi method is an effective method for the optimization of 2,6 dimethoxy benzoquinone production.
