Study the effect of shear rate and stabilization temperature on the foam density in wheat flour matrix was the
objective of this research work. A twin screw extruder is used to mix and dissolve CO2 gas in the dough. Production of
foam was done in three screw speed and extrudate foams were stabilized in three different temperatures (0, 25 and
50˚c). It was shown that at a given stabilization temperature, increase in screw speed, will increase foam density and
at a given screw speed, an increase in stabilization temperature, will decrease foam density. It was also shown that
increase of cell density leads to a decrease in foam density.
