فرآيند توليد محصولات كشاورزي، فرآيندي زمان بر و هزينه بر بوده است . بديهي است كه طي توليد محصول نهايي، مقداري بقاياي گياهي و پسماندهايي توليد شود . اين ضايعات عمدتا باعث ايجاد مشكلات زيست محيطي و از بين بردن آنها صرف هزينه هاي زيادي مي باشد .وجـود مقـدار نامتعـارف ضايعـات محصـولات كشـاورزي ، يكـي از معضـلات و تهديدهـاي پيـشروي تحقـق امنيـت غذايـي در جوامـع بشـري اسـت كه تحـت شـرايط و روشهـاي نامناسـب برداشـت، حمــل و نقــل، ذخيره ســازي، توزيــع و مصــرف تبديــل بــه ضايعــات گرديــده و از دســترس مصرف كننــده خـارج ميشـود. از ايــنرو به نظــر ميرســد كــه بــا پرداختــن و عنايــت ويــژه بــه جايــگاه مراقبتهــا و فناوريهــاي پـس از برداشـت محصـولات كشـاورزي و توسـعه صنايـع تبديلـي بتـوان از ضايعـات محصـولات كشـاورزي بـه ميـزان قابـل توجهـي كاسـت. بـا كاهـش ضايعـات محصـوالت كشـاورزي عـلاوه بـر بازگردانـدن حجـم قابـل توجهـي از محصـولات بـه چرخـه مصـرف، گامهـاي بلنـدي نيـز در راسـتاي افزايـش بهـره وري منابـع توليــد، از جملــه آب و ســاير نهاده هــاي توليــد (خــاك، كــود، ســم، ســوخت و انــرژي) ميتــوان برداشــت.
