Determination of Variations in Sweet Corn Kernel Quality in Relation to Post Harvest Usage
Abstract :
This research was carried out to determine fresh, frozen and canned kernel quality variations of some sweet corn varieties. The experiments were conducted during 2009 and 2010 at the Research Field of Agricultural Faculty, Eskisehir Osmangazi University. Seven sweet corn genotypes (‘Lumina’, ‘Merit’, ‘Sunshine’, ‘Jubile’, ‘Challenger’, ‘Yellow baby’ cultivars and ‘2201’ line) were used as materials. The experiments were designed as a randomized complete block design with four replications. Protein, sugar and starch content of fresh, frozen and canned kernels were determined. Protein, sugar and starch content increases and decreases in frozen and canned sweet corn kernels and correlation coefficient of sugar and starch contents among sweet corn genotypes were determined. Protein content of frozen and canned kernels were unchanged. Sugar content was highest for fresh kernels (5.1%), which was followed by frozen kernels (4.1%) and canned kernels (2.6%), respectively. Starch content was highest for fresh kernels (16.7%), which was followed by frozen kernels (15.1%) and canned kernels (11.8%), respectively. Correlations between starch and sugar changed between r= - 0.84 and r = -0.98, they were found to be statistically significant (P 0.01) for seven genotypes. Firstly, ‘2201’ line, secondly ‘Challenger’ variety which have high kernel quality c haracteristics were determined as suitable genotypes for both fresh consumption and processing.
