Abstract :
This study was carried out for determination of phytochemical and antioxidant characters in some fig cultivars. In the study, Bursa Siyahı, Sarı Zeybek, Yeşilgüz cultivars, and 01-İM-02 genotype were used. Total anthocyanins, total phenols, total antioxidant capacity, and sugar analysis were determined in these cultivars. Fruit quality characters such as fruit weight, fruit diameter, fruit length, neck length, ostiole width, TSS, pH, acidity, fruit skin and flesh colors (L, a* ,b*, C , and h°) also were evaluated. In the tested cultivars, total anthocyanins changed between 22.39-220.44 μg cy-3- rutinoside/ g FW, total phenolics changed between 76.44-118.38 mg/ 100 g GAE FW, and total antioxidant capacity changed between 8.27-14.22 mmol•Fe^+2/ kg FW. Bursa Siyahı and 01-İM-02 with black colors had the highest values in terms of these traits. Total phenols and anthocyanins were the most important factors affecting on total antioxidant capacity. As a result, phytochemical characters in fruit were shown to be highly different depending on the cult ivar.
