Abstract :
Some quality parameters of gradually harvested Hachia non-astringent persimmon (Diospyros kaki L.) fruits were investigated in Manisa-Alasehir region. Commercial cultivation in the area being made succesfully however some important problems are experienced related with growing and harvest periods. Accordance with the data obtained in this study, Hachia was determined as an appropriate variety for the region in terms of its climatic characteristics and high quality. Some quality analysis were gradually performed during the harvest period and product-specific color, hardness and taste loss was determined in late harvest period.
