Fungal Lipases and Use in Industrial Areas
Abstract :
Enzymes, which have important roles in cellular metabolism, were used as variety of purposes in daily and economical life. Lipases that are extensively used in industry are usually obtained from microorganisms. Hence, enzymes are produced by microorganisms have some advantages when compared with enzymes produced by plants or animals such as having higher catalytic activity, not forming undesirable by-products, being more stable and relatively cheap, and obtaining much quantity. Fungal species have more resistance to environmental conditions such as pH and temperature than other microbial species and the extraction of fungal enzymes are cheaper than other microbial enzyme extraction. Because of these advantages fungal biomasses are prepared for lipase production. Fungal lipases are extensively used in food, detergent and pharmaceutic industries. In this article relevant publications about fungal lipase that have mostly convenient enzymes in industrial areas were reviewed.
