Sensory Changes Occurrence in Agria and Bettina Potato Varieties Stored in Different Conditions
Abstract :
Potatoes with third place in terms of consumption of agricultural products in the world is situated in the diet of the masses due to the economic. Potato, as well as being an important source of starch, contains high biological value protein, also contains such as potassium mineral substances, B group vitamins and vitamin C. Potatoes having a common consumption and usage should be kept stored for times when there is no production. The potatoes are stored in unsuitable conditions changes in the sensory properties and nutrients occurs. Studies aimed at determining the extent of these changes in different storage conditions on the adverse effects of storage product quality is valuable for minimize. Therefore, especially in the domestic environment the storage conditions using the material of potato varieties Agria and Bettina research has been conducted to investigate the effects of the sensory properties of the potato. SPSS using tests that found a significant correlation between the color and hardness of the potato varieties (p 0.05), there was no significant relationship regarding shoot status. Both with storage time and with storage conditions between color, hardness and in shoot status significant relationship was found (p 0.05). The shelf life of potatoes can be improved by selecting the right storage conditions.
