Abstract :
In this study, consumption forms by native people and food contents of wild food plants distributed in and around Düzce were investigated. In and around Düzce, Falcaria vulgaris (Sickleweed), Tussilago farfara (Coltsfoot), Trachystemon orientalis (Abraham-Isaac-Jacob), Capsella bursa-pastoris (Shepherd’s purse), Raphanus raphanistrum (Wild radish), Chenopodium album subsp. album var. album (Goosefoot), Vaccinium myrtillus (Bilberry), Mentha longifolia subsp. typhoides var. typhoides (Wild mint), Thymus praecox subsp. skorpilii var. skorpilii (Thyme), Malva neglecta (Mallow), Portulaca oleracea subsp. oleracea (Purslane), Urtica dioica (Nettle) to 12 plant taxon belonging to 10 family were found. The highest moisture content was determined in Abraham-Isaac-Jacob (% 84,9), the lowest one was Wild radish (% 44). The highest organic matter was determined in Bilberry (% 94), the lowest one was Purslane (% 76). The highest protein content was found in Wild radish (% 32,26), the lowest one was Purslane (% 1,59). The highest fat content was determined in Coltsfoot’s petiole (% 2,33), the lowest one was Purslane (% 0,33). The highest cellulose content was evaluated in Thyme (% 28,1), the lowest one was Wild radish’s root (% 8,35). The highest tannin content was found in Nettle (229,9 g. kg^-1 KA), the lowest one was Wild radish’s root (5,2 g. kg^-1 KA). The highest antioxidant capacity was found in coltsfoot’s petiole (4,734 mmol TR g^-1) and the lowest antioxidant capacity was determined in Wild radish’s root (1,004 mmol TR g^-1). In all investigated plants, the highest mineral substance was K and the lowest one was Cu.
