Sauce Consumption Preferences and Affecting Factors in Çukurova District of Adana Province
Abstract :
The study was conducted to determine paste consumption of families in Cukurova Town of Adana Province. Data obtained with two hundred sixty nine questionnaires conducted in 2013 were used in the study. The results showed that all of the families consume pepper paste, 61.34% of them use tomato paste and some families consume both pepper and tomato pastes. The average monthly per family consumption of tomato paste and red pepper paste consumptions are 515.66 g and 965.15 g, respectively. Significant portion of the paste consumed are purchased (usually packaged) and some are prepared by the families at home. Since all of the surveyed families consume pepper paste, factor analysis was conducted for thoughts on pepper paste. the factor analysis started with 16 factors was completed with the 5 factors composed of 15 variables (quality and price, flavor and brand, health, benefits,habit).
