Abstract
The percentage of polar component in a polar-nonpolar emulsion is determined by the variation of the permittivity with such proportion. In the case of homogeneous emulsions the variation of permittivity depends only on the concentration of the components at a given temperature. If the phase inversion phenomenon does not take place, a continuous curve is obtained. The problems of conductivity in the continuous phase, usually present in this type of determination, were avoided using frequencies high enough so that the ionic effect does not affect the measurements
