Abstract :
Processes in pulp of vegetable ore subjected to the action of pulse electric discharges are considered. Electric discharges in pulp provide a high rate and level of extraction of substances soluble in water from vegetable ore. The results of electropulse extraction of proteins and vitamins from specific kinds of vegetable ore are presented. Processes accomplishing the electric discharge and providing an extraction efficiency are briefly discussed.
