Abstract :
A decision support system is proposed for a drying sausage application. This system gives advices to an operator for acting on the drying chambers in order to keep constant sensory characteristics of sausages. This decision support system is based on human sensory evaluations and knowledge modeled by fuzzy symbolic and Takagi-Sugeno rule based methods. Validations of the proposed system have been achieved at the experimental level and a compatibility of 94% is obtained between actions given by the operator and by the control support system.
