A systematic study of the dielectric properties of some polysaccharide degrading enzymes and polysaccharides has been undertaken in our laboratory and in pursuance with the results reported on an enzyme diastase the present work reports results on the frequency and temperature dependence of the dielectric constant, dielectric loss and ac conduction measurements in the case of a polysaccharide, dextrin
