Abstract
This paper describes the design and implementation of a pulse generator for food pasteurization. Such generator generates a high voltage (15 kV) square wave with a frequency in the range from 250 Hz to 30 kHz. The high voltage supplies two electrodes where, between them, the food is placed and then pasteurized. This pulse generator will be used by the Department of Food Engineering of Universidad de las Americas Puebla. Experimental results are shown in this paper to prove the proposed generator.
