Abstract :
Research on air impingement drying of line pepper was carried out using an air impingement drying dryer.7 different mathematical drying models were compared by some evaluation targets such as coefficient of determination (R2), root mean square error(RMSE), X2 and standard error(SE). The results showed that the Modified Page mathematical drying model was the fittest, which was related to the drying temperature and air velocity. The expression and values of model parameters were also obtained subsequently. It showed that the Modified Page mathematical drying model could sufficiently predict and control the drying process of line pepper, according to the comparison values and calculated values.
