  • Abstract
    According to the specialties of mini-type magnetic resonance imaging instrument, the authors developed more than 30 teaching experiment projects on medical imaging. Because of its open hardware configuration, these experiment projects have clear processes. Furthermore, some testing researches and analyses on characteristics of biology tissues and food samples have been done. Using this instrument, the research into the properties of water in food Systems, such as water molecular mobility, water-holding capacity, binding and hydration so on.
