Abstract :
In order to obtain the preparation technology of water soluble dietary fiber, malus asiatica was used as raw materials by enzymatic and chemical methods in this paper. Optimum conditions for extracting the water-soluble dietary fiber in the raw materials were confirmed through orthogonal tests. The results showed that optimum condition of the malus prunifolia was as follow: 0.5% glucoamylase with reaction temperature of 60°C, hydrolysis time 60min, pH 12 alkali with hydrolysis temperature of 70°C and hydrolysis time of 90min.
