Abstract
To comprehensively evaluate the nutritional value of protein in lotus seed, and provide a theoretical basis for the further development and utilization of lotus seed resource. The results showed that: The crude protein content and fat content were 19.99% and 6.82% respectively. The total content of 17 amino acids was 178.05 mg g-1 dry matter, in which the content of 7 essential amino acids was 64.71 mg g-1, the content of delicious amino acid was 58.15 mg g-1. The essential amino acids accounted for 36.34% of the total amino acids, which was lower than egg protein pattern but higher than WHO/FAO pattern. Tne EAAI was 70.84. The first limiting amino acid was methionine, the second one was threonine, and the third one was isoleucine. Based on all of the analyses, it can be concluded that lotus seed was a species of high quality in nutrition.
