            Abstract : 
To extract polysaccharide of Camellia Cake, cellulase-assist method was used. The extraction conditions were: temperature 50°C; time 3h; adding amount of cellulase 0.35%. The extract rate of camellia cakes polysaccharide is 26.62%. The adequacy of this model was confirmed.
