Use fresh Phaseolus vulgaris as raw materials, extracting Phaseolus vulgaris saponin by ultrasonic-ethanol method, determining the saponin content by vanillin- perchloric acid colorimetric method, the Saponin content in crude extract powder is 3.149%. Anatomised the stomach and intestine of effected mice after acute toxicity test of oral gavage mouse by Karber method, and observed epithelial tissue lesions with microscope after hematoxylin-eosin (HE) staining. The results showed that the LD50 of saponin was 1111.97mg/kg (oral), which was low-intensity toxicity. Pathological changes were not occurred in mouse gastric epithelial cells, intestinal epithelial cells appeared different degrees of pathological changes such as mucosal surface were changed irregular, dilatation and congestion were occurred in capillary, inflammatory cells were infiltrated, and the death mice were more serious than the survival mice.
