  • Abstract
    The antioxidant content and activity, and antiproliferation activity of jujube fruit that were harvested at different harvest maturity and stored at 0 and 15°C for 15 d were studied. As fruit matured, except triterpenoid saponins, total phenolic and flavonoid concentrations of jujube were affected by harvest maturity, storage temperature and storage time very much. These antioxitant contents in fruit stord at 15°C were lower than those at 0°C. A 50 g L-1 concentration of jujube extracts inhibited HepG2 human liver cancer cell proliferation by approximately 75~80%. The EC50 of antiproliferative activity of jujube fruit value was affected by the harvest maturity. But it nearly was affected (how, decrease or increase, by how much) by storage temperature and time.
