Abstract :
The microcapsules of controlled-release glucide were developed in order to prevent from hypoglycemia or glycemia. The microcapsules were prepared by using chitosan and alginate as wall materials. The effect of film condition on performance of microcapsules was studied. The results indicated that alginate concentration, ratio of alginate weight to glucose weight, chitosan concentration, calcium chloride concentration, reaction time and chitosan solution pH value had effect on glucose loading, encapsulation ration and release property of alginate/chitosan microcapsules. The optimal performance of release property was obtained when the ratio of alginate weight to glucose weight was 1.5, alginate concentration was 2.5% (w/v), chitosan concentration was 0.8% (w/v), calcium chloride concentration was 1.5% (w/v), reaction time was 5 min and the pH value was 5.5.
