Abstract :
Collagen were prepared from chicken bone, fat, minerals and hybrid protein were removed with ethyl acetate, hydrochloric acid and calcium hydroxide respectively, optimal extraction process of collagen were solid-liquid ratio 1:8, extraction temperature 100°C, extraction time 4h,pH=4.0. The content of protein extracted was 88.75%, collagen was 86.02%, ultra-fine bone powder was prepared form bone residue using ultra-fine pulverizer, then content of nutrients were determined. It not only solve the environmental problems of livestock and poultry processing industry but also opened up new channels and new areas for functional food´s research, it had good social and economic benefits.
