Abstract
This paper presents the determination of sucrose level content in various grades of watermelon ripeness based on near infrared (NIR) reflectance spectra. A few samples of different grades of red and yellow watermelons will be measured by using spectrometer. The wavelength measurement from NIR will then be compared with refractometer reading, whereby the refractometer reading will be a standard measurement to check the sucrose content in the watermelon. The analysis indicates that there is a correlation between the absorption of infrared and the percentage of the sucrose level for each watermelon. From the analysis, a standard categorization index of ripeness will be made with respect to its sucrose content. Based on the result, a curve fitting line is constructed by using Statistical Package for the Social Sciences (SPSS). This is to verify the relationship between the brix percentage value and the reflectance wavelength. Through the curve fitting line, the wavelength is successfully identified with respect to brix percentage value.
